This qualification is for both students who want to learn to cook and also to support students who want to learn about the vocational sector and the jobs it offers to them.

You will study for two units:

Unit 1 is externally assessed by a short exam (60%)

LO1 is related to the environment in which hospitality and catering providers operate. You will learn the structure of the industry and job roles required in the industry. You will also explain factors that affect the success of the hospitality and catering industry.

LO2 teaches you how a kitchen operates to ensure customer requirements are met. You will also learn about front of house and customer service.

LO3 involves explaining personal food hygiene and procedures in the kitchen to ensure that the food you produce id safe to eat. You will also learn about health and safety and the importance of reporting accidents that may occur in the kitchen.

LO4 involves you researching the different food poisoning organisms that can make you poorly. It also looks at food safety procedures in a kitchen and the role of the Environmental Health Officer. 

Unit 2 is a piece of coursework and is internally assessed (40%)

LO1 involves you looking at the nutrients we find in our food and how they can form a balanced diet.

LO2 is where you will examine existing types of menus and devise your own menu for your final dishes. You will learn how to cook a range of commodities and also how to finish the dish so it is restaurant quality. 

LO3 involves you trialling a range of dishes using different commodities. You will then choose your final two course meal and cook and serve it as though it was being served in a restaurant. You will be marked on your preparation, cooking and finishing skills.

Assessment

60% externally assessed unit with an exam (11/4 hours).

40% internally assessed unit (externally moderated) which takes 9 hours to complete.
